Way too often this product is easily mistaken with Olive oil and for this reason I would like to spend few words in order to make clearer the denomination of a product:
Extra Virgin olive Oil is the elite product which is obtained by the olives and only by a mechanical pressing of the fruit, a final stage of producing it will be to separate the water from the actual oil, this product is 100% natural and must have a free oleic acidity not over 0.8%, similar process for Virgin Olive Oil with the only difference that the acidity level can reach 2%
Their unique flavour is obtained from the simultaneous pressing of the olives with the fresh citrus or herbs.
